🇨🇼 CURAÇAO – PASTECHI 🥟⚽
For years the world knew Curaçao for a blue drink.
Now they’re getting to know them for their football.
They’ll be appearing at the world cup for the very first time.
To celebrate, I made one of the island’s most loved foods: Pastechi.
A crispy fried pastry that can be filled with cheese, beef, chicken, fish or salt cod. Today I went with the traditional cheese filling using
Small island. Big faith. Big dreams.
🇨🇼 PASTECHI RECIPE
Dough:
• 500g plain flour
• 1 tsp salt
• 1 tsp sugar
• 75g cold butter
• 250ml cold water
Filling:
• 300g Edam cheese, grated
• 150g Gouda cheese, grated
• 1 egg white
For frying:
• Vegetable oil
Method:
1. Mix flour, salt and sugar together.
2. Rub in the butter until it resembles breadcrumbs.
3. Add cold water and bring together into a dough.
4. Knead for 5 minutes and rest for 30 minutes.
5. Mix the cheeses and egg white together.
6. Roll dough to roughly 3mm thick.
7. Cut into circles around 15cm wide.
8. Add filling, fold over and crimp edges with a fork.
9. Fry at 170-175°C for 3-4 minutes per side until golden brown.
10. Drain and serve hot.
🍹 Bonus Curaçao fact:
Blue Curaçao is made using the peel of the Laraha orange, a citrus fruit unique to the island. You’ve probably tasted Curaçao before without even realising it.
