This is a delicious way to cook that 3 pound chuck roast you've been holding on to and just don't want to have roast beef again. Easy to make and versatile, this goes great on a tortilla, over rice, or on a sandwich.
Ingredients:
2-3 pound chuck roast (thawed out)
1 cup beef broth
1 15 oz can fire roasted, diced tomatoes
3 whole limes, juiced
1 large onion, diced
1 teaspoon ground cumin
2 teaspoons onion powder
2 teaspoons garlic powder
salt and pepper to taste
Directions:
1. Add all the ingredients to the slowcooker. Cook on high for the first hour, then turn down to low and cook an additional 7 hours.
2. TIP: Cover the slowcooker with a towel to help keep the steam in and speed up the cooking a bit.
3. Break up the meat with a fork and stir around in the liquid. Use tongs to dish out the meat when ready to serve.
