RECIPES IN THIS VIDEO:
Pancakes
Ingredients:
6 ripe bananas
3 c. oats
1 1/2 c. plant milk
1 tsp baking powder
1/2 tsp baking soda
2 tsp vanilla
Method:
Blend all ingredients together and cook on a non-stick pan. Best to cook with a little oil.
Strawberry Jam
Ingredients:
10 oz frozen strawberries
3 medjool dates, pitted and chopped
1/2 lemon, juiced
2 tbsp whole chia seeds
drizzle of maple syrup
Method:
1. Cook strawberries and dates on low/medium heat until you can smash the strawberries easily with the back of a wooden spoon.
2. Remove from heat and add lemon juice, chia seeds, and maple syrup. Stir together until fully combined.
3. Serve hot for more of compote or serve cold for more of a jam.

Hummus Pasta
Ingredients:
8 oz pasta
Some chopped veggies like zucchini, bell pepper, olives, sundried tomatoes and anything else you have on hand
1 cup of garlic hummus
Method:
1. Cook pasta according to package, drain, and set aside. Reserve some pasta water, about half a cup.
2. In a large pan, sautee your veggies for a few minutes, then scoot them to the side of the pan to add your hummus. Add your reserved pasta water to stir into the hummus to create your desired consistency.
3. Stir everything together until evenly combined.
Guacamole Salsa
Ingredients:
10 tomatillos
1 jalapeno, sliced in half and deseeded
1 avocado
1 bunch of cilantro
1 lime, juiced
2 cloves garlic
1/2 onion
salt and pepper to taste
Method:
1. Preheat oven to 400 degrees. Remove husks and tomatillos and wash them. Roast tomatillos and jalapeno until browned, about 15 minutes.
2. Blend roasted tomatillos and jalapenos with the rest of the sauce ingredients until very smooth.
Mexican Street Tacos
Ingredients:
8 oz soy curls
2 tbsp taco seasoning
Corn tortillas
White onion
Cilantro
Method:
1. Rehydrate your soy curls by covering them in water and soaking for 10 minutes. Drain excess water.
2. Cook on medium heat and stir in taco seasoning. Satuee until browned.
3. Serve soy curls in warmed tortillas. Top with green sauce, onions, cilantro, and hot sauce if desired.
Mango Sorbet
Ingredients:
1 cup frozen mango
a bit of liquid like water, orange juice, pineapple juice, or coconut water
Method:
1. Blend mango with a bit of liquid in a high-speed blender until smooth.
