Mashed Potato & Burger Pie
(For a 12” Camp Oven)
Ingredients:
3 tbsp. unsalted butter
2 tbsp. milk
2 lbs. yukon gold potatoes, peeled & diced
water to cover potatoes for boiling
1 large yellow onion, chopped
2 lbs. lean burger meat
1 ½ tbsp. canola oil
salt & pepper
4 small roma tomatoes, diced
½ cup ketchup
1 ½ tbsp. apple cider vinegar
1 tbsp. yellow mustard
1 tbsp. molasses
1 tbsp. worcestershire sauce
1 ½ tbsp. barbecue sauce
Directions:
1. Place a single layer of briquettes under the oven. Place potatoes into the oven, cover the potatoes with water, bring to a boil. Add a dash of salt, reduce heat & simmer 15-20 minutes until tender. Drain potatoes and save ¼ cup of potato water, if needed for later. Add a pinch of salt & pepper, butter, milk, mash the potatoes with a potato masher and stir with a wooden spoon. If needed, add potato water to help make potatoes smooth & creamy. Transfer mashed potatoes to a bowl, covered. Wipe oven clean to start on the meat.
2. Replenish briquettes with a fresh single layer of coals under the oven, if needed to cook the onions, meat and tomatoes. (coals are good for 1 hour) Add oil and onions and cook until are tender, stirring a few times with a spoon. Add crumbled meat and cook until no longer pink, usually 6-7 minutes. If needed, use a spoon to remove any excess fat. Add tomatoes into the meat mixture and continue to cook, stirring a few times for 4-5 minutes.
3, Using a small bowl, whisk together the ketchup, vinegar, mustard, molasses, Worcestershire sauce and barbecue sauce, until well blended. Add sauce to meat mixture, continue to cook for about 2 minutes. Remove coals from under oven and completely cover the lid with a single layer of the retrieved coals, best to place lid on a lid inverter stand of trivet.
4. While lid is heating, spread mashed potatoes over the meat mixture to form a smooth potato layer on top. Sprinkle potatoes with paprika and place heated lid onto the oven. Broil for 4-5 minutes, or longer until potatoes are just slightly browned. Remove top heat and serve. Top with shredded cheese, if desired.
