Chewy tapioca pearls, creamy coconut milk, and sweet ripe mangoes— this mango sago is a light and refreshing dessert made with simple pantry ingredients.
While sago and tapioca pearls are similar, they are technically not the same as sago is made from the pith of sago palm trees, while tapioca is made from the starch of the cassava root. While both can be used, tapioca pearls are easier for us to find and more common.

Ingredients
* ½ cup small uncooked tapioca pearls
* 3 ripe mangoes, chopped into cubes
* 1 can (13.5 oz) coconut milk
* 1-4 tbsp vegan condensed milk (or maple syrup), to taste
* ¼ tsp vanilla extract
* ¼ tsp salt
* ¼-½ cup water (optional to loosen)
Instructions
1. Cook the tapioca pearls.
2. Blend coconut milk, vegan condensed milk, vanilla extract, salt, and a third of the mango. Adjust sweetness to taste.
3. Rinse the tapioca pearls then combine with the blended mixture and mango chunks.
4. Stir and add more water as desired to thin.
5. Serve immediately or transfer to the fridge to chill.
