Is it what’s on the inside that counts?
With dumplings, absolutely, but making your own wrappers is well worth it.
You’ll need:
280 g All-purpose flour, unbleached
120 g Cake flour, unbleached
6 g Kosher salt
212 g Boiling water, 212 °F / 100 °C
Cornstarch, for dusting, as needed
Dough it:
Whisk together all-purpose flour, cake flour, and salt until well combined. Add boiling water and mix with a wooden spoon until a shaggy dough forms. Hand knead in bowl, 2 mins. Transfer to counter, keep kneading until ball forms. Cover with bowl, rest 15 mins.
Uncover dough and knead until a smooth ball forms. Cover dough, rest 1-12hrs. Coat dough with a thin layer of neutral oil before covering if resting over 1hr.
Set up pasta roller. If using a 6-inch, divide dough into 3 equal portions. Dust work surface with flour. Run dough through widest setting of pasta roller twice. Gradually roll the sheet through finer and finer settings, dusting dough lightly with flour as needed. Roll until 36 inches long. Repeat for other portions.
Punch out dumpling wrappers, using a 3 1/2-inch diameter ring mold. Dust each wrapper with a fine layer of cornstarch, stack and wrap in plastic.
Put to use and make your dumplings, or store for later.

![How to Cook a Picanha Steak—Like a Duck Breast!
The top sirloin cap is a cut of beef that’s prized in other countries, but not so much here in the U.S. Called picanha in Latin America and, when sliced into steaks, coulotte in France, it’s delicious when it’s prepared and sliced correctly.
Master butcher Kevin Smith of Seattle’s Beast & Cleaver has an innovative method for cooking up a picanha, inspired by how the odd cut of meat with a huge fat cap looks: He cooks it like a duck breast.
Watch Kevin trim, score, and roast this amazing cut of beef so that each slice of steak contains a range of textures and flavors.

![How to Make the Ultimate Pâté en Croûte
Pâté en croûte is a pâté or terrine wrapped in a pastry crust. Sounds simple, right? And yet it’s the pinnacle of the charcutier’s craft. Few preparations have as many different components, and to make a decent pâté en croûte, you need to get every last detail right. For the most beautiful (and delicious) versions of the dish, every element has to be executed near perfectly. That’s why we recruited Kevin Smith of Seattle’s Beast & Cleaver to show us how to make his award-winning pâté en croûte—a labor-intensive process that takes at least 4 days. The mosaic-like pâté en croûte—beautifully seasoned and spiced pâté dotted with foie gras, boozy prunes, pistachios, and boudin noir, enveloped in a seamless buttery pastry crust—is a work of art. #beastandcleaver #pateencroute #charcuterie

![How to Make Super-Juicy Butterball Rotisserie Chicken
What do those super-juicy and tender rotisserie chickens from Costco and grocery stores (and Butterball turkeys!) have in common? They’re brined with a solution of salt, sugar, and phosphates.
Chef Tim Chin demonstrates how to safely and effectively use sodium tripolyphosphate (STPP) safely in a brine to make a roast chicken that’s every bit as tender and juicy as a Butterball bird or a roast chicken from the store, but with golden brown, crisp skin, thanks to a few key techniques: injecting the brine into the meat, rather than submerging the entire bird in brine; air-drying the skin; and brushing a thin film of oil over the exterior before roasting.
