Professor Craig Steinmaus of the University of California Berkeley describes his research on arsenic exposures from drinking water in communities in Chile. He explains sources of arsenic and the many health effects that occur as a result of arsenic in drinking water, a common problem in many parts of the world. His current research is about children and how their exposures to arsenic may cause diseases.
Arsenic-containing drugs intentionally added to poultry feed to reduce the parasite burden and pinken the meat are apparently converted by cooking into carcinogenic inorganic arsenic compounds.
Pediatric nutrition authorities have recommended that when it comes to rice and rice-based products, arsenic intake should be as low as possible.
What was the National Chicken Council’s response to public health authorities calling for the industry to stop feeding arsenic-based drugs to poultry.
Feeding chickens arsenic-based drugs?
Getting rice down to the so-called safe water limit for arsenic would still allow for roughly 500 times greater cancer risk than is normally considered acceptable.
