This low-carb angel hair pasta dish is bright and buttery, all without any starchy carbs or grains. It's all thanks to shirataki noodles, also known as miracle noodles. Made from the konjac plant, these noodles are comprised of mostly water and a small amount of soluble fiber, making them naturally low-carb and gluten-free.

Ingredients:
- 2 (7-ounce packages) shirataki angel hair noodles
- 1 lb. pastured chicken breast, cut into bite size pieces
- 1 tablespoon XCT MCT oil or other oil (shop.bulletproof.com/products/xct-oil-16-oz?_ga=2.71775195.917650529.1580748224-76529778.1538588147&utm_campaign=low-carb-pasta-lemon-chicken-recipe-3g&utm_medium=blog&utm_source=post)
- 1 large clove organic garlic, minced
- ½ teaspoon dried oregano or 1 teaspoon minced fresh oregano (leaves only)
- ½ teaspoon Himalayan pink salt
- 1 large lemon, zested and juiced (keep zest separate from juice)
- 2 tablespoons grass-fed butter or ghee
- 1 tablespoon Collagelatin, or other grass-fed gelatin (shop.bulletproof.com/products/collagelatin-net-wt-16-oz?_ga=2.71775195.917650529.1580748224-76529778.1538588147&utm_campaign=low-carb-pasta-lemon-chicken-recipe-3g&utm_medium=blog&utm_source=post)
- 1-2 tablespoons fresh oregano to finish (leaves only)

Instructions:
1. Prepare shirataki noodles according to package directions (rinse for 15 seconds, then boil for 2 minutes in a pot of boiling water, then drain the noodles and place them in a dry skillet (no oil) over medium heat and “dry roast” them for 1 minute). Set aside.
2. Heat a large cast iron skillet to medium-high heat and add oil. (*Don't let it get too hot — you don't want to overheat your oil. MCT oil's smoke point is 320 degrees F.)
3. Add chicken, garlic, dried oregano and Himalayan pink salt to skillet and cook for approximately 8-10 minutes or until fully cooked, stirring occasionally. Remove chicken from skillet leaving and set aside.
4. Lower heat under skillet to medium and add lemon juice to deglaze pan. Next add butter and stir until melted. Then whisk in Collagelatin to finish.
5. Add noodles and chicken back to skillet and toss to combine.
6. Serve topped with lemon zest and a garnish of fresh oregano.
