Low Carb Patty Melt Wraps (and a fishing lapse)  @Juanelo1946

As you’ll see, I couldn’t catch any decent fish for a recipe. I’ve been wanting to make something with beef anyway. Why not re-do a low-carb patty melt from two years ago? The wraps were great! But the video itself was poor. Let’s do it again… I want patty melts! Low carb of course! See all the info by clicking SHOW MORE.

Patty Melt Wrap Recipe

Ingredients:
One large sweet onion (or 2 medium)
8 ounces of sliced mushrooms
One and ½ stick butter, divided
One and ½ pounds of ground chuck
4 tablespoons reduced sugar ketchup
3 tablespoons of brown mustard
One and ½ Tablespoons of Worcestershire
One teaspoon of seasoned salt, divided
½ teaspoon of ground black pepper
6 slices of Swiss cheese (can be doubled!)
6 large (burrito size) low-carb tortillas (or 3 Joseph’s Reduced Carb lavash breads)

Instructions:
Cut onions in half, then slice thinly. In one stick of butter (8 tablespoons, but you may use less), sauté the sliced onions on medium-low heat in a large skillet. When onions are translucent, add the mushrooms and continue to sauté both until onions are nicely browned and caramelized and mushrooms are dark and cooked. Put them into a bowl and lay them aside.

Wipe down the large skillet. On medium heat, brown the ground chuck. Season with ½ teaspoon of the seasoned salt. Drain the beef if necessary.

To a small bowl mix the ketchup, mustard, Worcestershire sauce, the other ½ teaspoon of the seasoned salt, and ground black pepper. Stir well. Mix this into the skillet with the ground chuck.

Lay out a tortilla or flat bread. Lay 1(or 2) slice of cheese on the tortilla keeping the cheese on the half of the tortilla closest to your body, Add 2 or more TBS of the meat mixture and about the same amount of the onions and mushrooms. Turn in the short sides of the tortilla while rolling up the tortilla, burrito style. Repeat with the remaining tortillas.

Wipe the skillet clean again and melt ½ stick of butter on medium-low heat. Add the wraps and brown lightly in butter. When they are slightly toasted and the cheese inside is melted, remove them. Cut them in half on the diagonal and plate them up.

THE BAIT: was a 1/32 ounce lead jig head with mealworms purchased from a country convenience store.

THE SPINNING REEL: is a Pflueger Trion GX-5. This model is no longer made.

THE SPINNING ROD: is a tiny Daiwa SMC401ULFS Spinmatic-C SpinRod (4- Feet, Ultra Light, 1 Piece, 1-4 pound line test recommended). It can be found on Amazon, Fish USA, and other places.

THE LINE: the spinning reel line is SpiderWire, Ultracast, Invisi-Braid in 10 pound test, 2 pound monofilament equivalent.

THE BOAT: is a 1986 Jon Boat. Brand is unknown, a gift from the estate of a deceased friend.

THE LAKE: is called Lake Ketchabigwon (named by native Americans). It is almost 6 acres and is located in NE Ohio. It sits on 37 acres of property. The lake is private.

FISH IN THE LAKE: are largemouth bass, bluegill, white crappie, black crappie, yellow perch, channel catfish, and grass carp.

LARGEST FISH CAUGHT: The biggest was a grass carp I hooked and managed to beach. It weighed over 30 pounds. Next was a channel cat (accidentally caught while bass fishing) of 10 pounds. The largest crappie was 14¾ inches and weighed 2 LBS and 1 oz. I did not measure the largest bluegill, but it had to be at least 10 inches. Finally, my largest bass was 6¾ pounds caught here at Lake Ketchabigwon.

VIDEOGRAPHY: The principal camera is my iPhone 6s Plus on a tripod. I also use an iPhone 5s as a close-up, counter-top camera when cooking. It is mounted on a small tripod. I use a Rhode microphone indoors to help lessen the echo. The video is edited on my MacBook Pro using Final Cut Pro X.
