I am not a Chef just a Home Cook. I make simple and easy recipes.
I grew up on garden food and southern home cooking. I will be sharing some recipes that my Momma made and other family recipes and things I made for my family when my kids were growing up. I also look for new things to make online or recipe books and will make it and give it a try.
Lime Poke Cake Recipe:
Ingredients:
Cake:
2 cup white sugar
1 cup unsalted butter (softened)
2 large eggs
4 teaspoons vanilla extract
3 cups all-purpose flour
3 1/2 teaspoons baking powder
1 cup milk
Gelatin:
3 oz any flavor gelatin
1 cup boiling water
1/2 cup cold water
Mix until gelatin is dissolved.
Frosting:
Vanilla instant pudding
1 cup milk
3 oz gelatin
8 oz cool whip, whipped topping
Mix pudding and milk together until thick and add gelatin in, mix well then fold in cool whip and spread onto cake.
Directions:
If using a box cake go by the directions on the box.
Sift all dry ingredients.
Add vanilla, milk and butter, Mix with electric mixer and mix in eggs one at a time.
Add into 9x13 inch baking pan.
Bake at 350 degrees 30 to 35 minutes or until toothpick comes out clean.
Set aside when done and make gelatin. Poke holes 1/2 inch apart and add gelatin all over getting into holes.
Refrigerate 1 to 2 hours then make frosting and frost and put back in fridge 1 hour or overnight.
Cover cake.
Must be kept in fridge.
