Life-Changing Pizza Dough at Home
Great pizza starts with great dough. With Joe Heffernan from Seattle’s Independent Pizzeria, we show you how to make a simple, game-changing dough you can start today and bake tomorrow.
Recipe guidance:
• 415 g bread flour + 9 g salt
• 270 g water at 65 °F / 18 °C + 1.5 g cake yeast
1. Mix flour and salt in one bowl, water and yeast in another.
2. Make a well in the flour, pour in liquid, and stir to combine.
3. Knead with a dough hook for about 7.5 minutes.
4. Ferment 5–8 hours, then divide into 230 g balls.
5. Chill and rest overnight.
6. Stretch, shape, and top for your best pizza yet.

• Cold resting overnight improves flavor and texture.
• Always weigh ingredients for consistency.
• Dough should be smooth and elastic before fermenting.

![How to Make a Potato “Croissant”
Potato pavé is basically a fine-dining version of a tater tot: a terrine of stacks of razor-thin slices of potatoes that’s sliced and deep fried, crispy on the outside, creamy on the inside, but with all the sharp edges and clean lines that chefs like to put on a plate.
But what if you took a pavé and made it crispier, creamier, and made it look even more incredible? That’s what we did: We call it the potato croissant.
Like a croissant, it’s got beautiful, laminated layers, but instead of sheets of dough with butter sandwiched in between, it consists of potatoes and clarified butter. And instead of crispy tiled bricks, it takes the shape of a whorl that recalls a shell or a rosette. Because of that shape, it has significantly more surface area; when fried, it’s as crispy as a french fry on the outside, but it still has that tot-like creamy consistency within.
In this video, chef Tim Chin shows you how to prep and assemble our potato croissants. Pair them with holiday roasts or chicken for a stunning celebratory meal or top them with crème fraîche, caviar, and chives for the most ridiculously, ridiculously good-looking canapé.

![Choux au Craquelin: When a Cookie and a Cream Puff Have a Baby
Choux au craquelin is basically a cream puff capped with a crackly cookie top. Filled with crème légère, or pastry cream lightened with whipped cream, it’s either the best cookie in the world or the best cream puff—or both!
It’s also a standout example of the unique qualities of pâte à choux, or choux pastry, a dough that’s almost batter-like in consistency. Choux pastry produces pastries with cavernous, airy interiors and a crisp shells—éclairs, gougères, cream puffs ... they’re all made with choux—but unlike other doughs, the oven spring is purely steam-powered; there’s no yeast or baking powder that’s giving those pastries their incredible loft.
In this video, Tim Chin shows you how to make pâte à choux and how to pipe it out and cap it with craquelin cookie dough. As the choux puffs bake, the high-fat cookie dough melts, enrobing the puff completely, limiting its rise so the top bakes up into an almost perfect mound.
