Pure salmon flavor, juicy on the inside and lightly crisp on the outside.
You’ll need:
910 g Salmon fillets, skin and boneless
2 Egg yolks
4.5 g Kosher salt, 0.5% weight of salmon
Hamburger buns
Mayonnaise
1 recipe Fresh and Bright Instant-Pickled Lemons
Bibb lettuce leaves
Great form:
Cut salmon, straight from fridge, into 1 1/2- to 2-inch pieces. Transfer to food processor with egg yolks and 4.5g salt. Pulse 6-8 times. Can also hand chop and mix in yolks and salt.
TIP: If the mixture has warmed up too much to form patties, transfer bowl to refrigerator and chill for 15 minutes.
Spray four 6-inch cooking parchment squares with cooking spray. Place 4 equal portions of salmon onto parchment. It’s easiest to measure portions with measuring cup.
One portion at a time, on parchment square, form 1/2-inch-thick patty, 5 inch diameter. Repeat with remaining portions. Watch for complete walkthrough. Fridge 1hr to overnight.
Prepare two-zone grill - fill one side of grill with gray ash hot coals. Set grill grate in place, cover grill, and open lid vents completely. Heat for 5 mins.
Heat and spray skillet with cooking spray. Season top side of patty with salt and transfer to skillet, seasoned-side down. Cook, undisturbed, 30 secs to 1 min. Flip and cook, same time. Transfer burger to cool side. Repeat with remaining patties.
Return to hot side, cook until burgers are lightly charred on bottom, 30 secs to 1 min. Flip and cook on second side until lightly charred, 30 secs to 1 min. Meanwhile, add closed buns on cool side.
Once burgers are lightly charred on second side, transfer to cool side. Split buns and transfer to hot side of the grill, cut-side down. Toast 15 to 30 secs, then transfer back to cool side. Cook burgers on cool side of the grill until they register 135°F / 57°C.
Spread mayo to toasted buns, place burgers on bottom buns and top with pickled lemons and lettuce. Serve and enjoy!

![How to Make a Potato “Croissant”
Potato pavé is basically a fine-dining version of a tater tot: a terrine of stacks of razor-thin slices of potatoes that’s sliced and deep fried, crispy on the outside, creamy on the inside, but with all the sharp edges and clean lines that chefs like to put on a plate.
But what if you took a pavé and made it crispier, creamier, and made it look even more incredible? That’s what we did: We call it the potato croissant.
Like a croissant, it’s got beautiful, laminated layers, but instead of sheets of dough with butter sandwiched in between, it consists of potatoes and clarified butter. And instead of crispy tiled bricks, it takes the shape of a whorl that recalls a shell or a rosette. Because of that shape, it has significantly more surface area; when fried, it’s as crispy as a french fry on the outside, but it still has that tot-like creamy consistency within.
In this video, chef Tim Chin shows you how to prep and assemble our potato croissants. Pair them with holiday roasts or chicken for a stunning celebratory meal or top them with crème fraîche, caviar, and chives for the most ridiculously, ridiculously good-looking canapé.

![Choux au Craquelin: When a Cookie and a Cream Puff Have a Baby
Choux au craquelin is basically a cream puff capped with a crackly cookie top. Filled with crème légère, or pastry cream lightened with whipped cream, it’s either the best cookie in the world or the best cream puff—or both!
It’s also a standout example of the unique qualities of pâte à choux, or choux pastry, a dough that’s almost batter-like in consistency. Choux pastry produces pastries with cavernous, airy interiors and a crisp shells—éclairs, gougères, cream puffs ... they’re all made with choux—but unlike other doughs, the oven spring is purely steam-powered; there’s no yeast or baking powder that’s giving those pastries their incredible loft.
In this video, Tim Chin shows you how to make pâte à choux and how to pipe it out and cap it with craquelin cookie dough. As the choux puffs bake, the high-fat cookie dough melts, enrobing the puff completely, limiting its rise so the top bakes up into an almost perfect mound.
