This is a delicious recipe for searing shrimp, making a creamy bacon corn sauce, all going on top of a plate of pasta. Served with hush-puppies and Cole slaw. This recipe is flavor full and comes highly recommended. You will love it.

Recipe for Seared Shrimp with creamy bacon corn starch
2 cups cream corn
2 tsp olive oil
2 tsp butter
1/4 tsp kosher salt
1/4 tsp pepper
1 lb shrimp or scallops
4 slices of bacon fried and chopped
1/2 cup tomatoes-chopped
1/2 cup chopped bell pepper
1/2 cup chopped onion
1 Tb blackening season
1/2 cup half/half
Directions:
Rinse and pat dry shrimp or scallops. Season with salt & pepper
Heat large skillet on med/high, add chopped bacon to pan.
Cook 3-4 minutes until crisp leaving 1 Tb bacon grease in the pan. Drain off on paper towel.
Stir in tomatoes, onions, bell peppers and cook for 3 minutes until soft.
Add blackening season, corn, and half/half to pan cook for 5 min on med/low stirring frequently.
In another pan, saute oil & butter over high heat until it begins to smoke, then add the shrimp or scallops making sure they are not touching each other.
Sear for 1 1/2 minutes on each side. Do not overcook. Plate up the pasta, then top with the corn mixture, then top with your shrimp or scallops.
This can also be served over rice or grits.
