Applejack, not to be confused with the sugary kids cereal, is a distilled spirit that has been made in America since the late 17th Century. It was distilled by George Washington and served in Abraham Lincoln's tavern. It's mostly been forgotten in recent years. It's hard to find cocktails that feature it, but luckily it is base spirit in the Prohibition-Era classic, the Jack Rose.
The Jack Rose is deceptively smooth for a cocktail that is served up. So, this is a good one if you're not used to drinking really boozy cocktails like martinis.
Applejack is distilled from apples and like pear brandies, they keep a lot of the aroma of the distillate. The lemon juice is a prominent ingredient and is definitely more tart than sweet. But the grenadine, which is basically pomegranate syrup, really balances it out. Drinking it straight, Applejack really only retains the apple flavor on the nose. But both mixers in this cocktail really help draw a lot of the apple flavors out of the Applejack.
Give this one a try. It's an all-American cocktail made with a genuinely American spirit. Cheers!
