Homemade honey syrup is up there with some of the easiest recipes. Honey makes a great sweetener for drinks and is prominently featured in some of my favorite drinks, Bee's Knees and Penicillin. It's certainly something you should have in your home bar.
Essentially all you want to do is to thin the honey out, so that it can be more easily poured and, more importantly, can be fully-integrated into the drink. If you pour straight honey into your cocktail or your shaker, you'll be left with a lot of residue clinging to the sides and bottom of your glass. This allows it to sweeten and flavor the cocktail more effectively.
There' s more than one way to skin this syrup, but this method is my favorite. The hot or boiling water loosens up the honey so that it becomes easier to stir. It can be stirred together with cold water, but it will just take a lot more effort. Save your shoulder and do it with heat. Cheers!
Recipe:
6 oz Honey
2 oz Water
Measure out honey. Add boiling water. Stir. Bottle.
