Recipe
Ingredients:
• 2tbspn Worcestershire sauce
• 1tbpsn tomato paste
• ½ cup cream
• Small knob of butter
• ½ a shallot finely diced
• ½ cup beef stock or broth
• 2 tbspn Dijon mustard
• ¼ cup cognac or brandy
• Optional: chives finely chopped
Directions:
• Mix together the Worcestershire sauce, tomato paste, stock and mustard in a bowl and set it aside.
• Heat a small pan to medium heat and add the butter and shallot, fry until slightly browned, then deglaze the pan with a splash of cognac (it will likely catch fire, that’s fine), let the alcohol cook off for about a minute before adding the other wet ingredients and the cream.
• Simmer gently for 5 minutes to thicken it and serve it with the chives.
