Makes 1
1 cup fresh or frozen strawberries
2 tsp lemon juice
1 tbsp maple syrup
300ml milk of your choice (I prefer soy milk)
2 tsp ceremonial matcha powder (I like it strong but you can use less)
Around 30ml warm water
Ice cubes
Add the strawberries in a saucepan over high heat. Cook for 5 minutes until they soften, mixing occasionally. Reduce heat and start to mash with a fork until jammy. Optionally add to a blender and blend for 30 seconds until pureed.
Prep your matcha whisk in hot water. Sift the matcha into a bowl, add the water and whisk in a zig zag motion until frothy.
Add the strawberry jam to a glass, then ice, milk and the matcha. Mix and enjoy!
