Homemade Kola Syrup Recipe

Ingredients
- 300 ml Water
- 1 g Kola nut
- 0.5 g Cinnamon
- 0.5 g Nutmeg
- 0.4 g Coriander seeds
- 0.4 g Ancho Chili flakes
- 0.3 g Vanilla
- 0.3 g Melilot (AKA Sweet Clover) - 1 g Lime zest
- 0.5 g Lemon zest
- 1.5 g Orange zest
- 1.5 g Citric acid
- 0.5 g Malic acid
- 230 g Plain white sugar
- 100 g Raw cane sugar
- 1 Tbsp Coloring caramel* (Here's Dary video link youtube.com/watch?v=T7OvogWyMDo&t=660s)

Method
1. Grind the Spices : Using a mortar and pestle, grind the kola nut, cinnamon, nutmeg, coriander seeds, ancho chili flakes, vanilla, and melilot until they form a fine powder.
2. Prepare the Sous-Vide Bag : In a sous-vide bag, add the water, plain white sugar, raw cane sugar, citric acid, malic acid, lime zest, lemon zest, orange zest, ground spice mixture, and coloring caramel.
3. Seal and Cook : Seal the bag and cook sous-vide for 1.5 hours in a water bath heated with a thermo circulator set to 80°C.
4. Cool the Syrup : After cooking, plunge the sous-vide bag into an ice water bath until it cools down completely.
5. Strain the Syrup : Fine strain the mixture through a couple of layers of cheesecloth and bottle up the syrup.
6. Optional : For a clearer syrup, run the filtration a couple of times through the same filter, leaving the sediments in the filter each time.
Enjoy your homemade kola syrup!

*How To Make Coloring Caramel
(Very important to wear temperature resistant gloves because this gets very hot)
Cover a saucepan bottom with a little bit of water, about 1.5 oz.
Add 2 cups of sugar and cook a medium heat until it reaches 310 Fahrenheit .
Don't stir too much otherwise some crystals will form.
As soon as you reach the temperature, remove from heat and place the sauce pan in a larger cast iron placed on a counter heat protector. The cold temperature of the metal will help to cool down the caramel.
Leave a large and long spoon in the sauce pan, long enough so it sticks out of it.
Than add one cup of room temp water and immediately place a lid over the saucepan.
The vapor will escape from the side because you left the spoon and thats what we want but be careful because this is hot steam.
Than, once it has stopped steaming, you can stir until the caramel and water are integrated. If it's too tough, place the saucepan back over low heat and stir until it's completely mixed.

Cola Foam Recipe

Ingredients
300 ml Filtered water
60 ml Kola syrup
2 g Methyl Cellulose
0.5 g Xanthan Gum

Method
Blend the Ingredients: In a blender, add the filtered water, kola syrup, methyl cellulose, and xanthan gum. Blend at high speed for 10-15 seconds until fully combined.
Prepare the Cream Whipper: Pour the mixture into a 500 ml ISI cream whipper.
Charge with NO2: Charge the cream whipper with a NO2 cartridge and shake it for 30 seconds.
Chill the Foam: Place the cream whipper in the fridge for one hour before using.
