The challenge was to do a cook for our wives. My wife loves my ribs, but for this one she chose chicken drumsticks and grilled potatoes. It sounded like a weekday meal, but there are a few twists in this video. Stay tuned and watch, the recipes are down below. I did use a combination of rubs and sauces on the chicken, all of which were fantastic, here are some links to the rubs and sauces I used:
Rich's River Dirt All Purpose rub and It's Incredible, both available at:
heavenmadeproducts.com/products.html
The hot Nashville rub was from the grocery store. :)
Sauces
Carolina Q's Vinegar Sauce:

Brother's BBQ sauce (local grocery but you can order it here):

Grumpy's BBQ sauce Spicy (also grocery, a local sauce which you can get here):

Smoked chicken legs
Chicken legs - I used 11 to try out the different rubs and sauces
Your favorite rub, the ones I used are a great option
Your BBQ sauce of choise
Start the coals, add some wood chunks, I used Hickory this time
Dust your chicken legs with the rub
Chicken does well with a faster cook than low and slow, in an hour at about 275-300 they should be close to ready
Check for internal temp which should read about 155-160
Brush sauce on the chicken and put em back on for 5-10 mins to let the sauce set, internal temp should come up to 165
Eat em!
---------------
Injection sauce (optional)
1 habanero stem removed and rough chopped
2 jalapenos stem removed and rough chopped
1 fresno pepper stem removed and rough chopped
2-3 Tbs butter
2 Tbs Honey
Salt, pepper other spices to taste (I used Cajun spice)
1 1/14 Cup Water
Melt down the butter, put all the ingredients into a blender, pulse until smooth.
Strain the seeds and skins and inject into the chicken.
After sitting for a bit and cooking, it gives a kick but it's great and not overwhelmingly hot.
--------------
Smoked potatoes
4 russet potatoes - diced into about 1in cubes
1/4 - 1/2 tsp baking soda
Salt, pepper or any other seasonings to taste
Parboil the potatoes until fork tender on the outside, about 20 mins.
Put the diced potatoes into a bowl, add olive oil to coat, the baking soda and the spices.
Shake the bowl so that they get roughed up a bit on the outside, the baking soda and this will
make sure they crisp up.
Finish until crispy on the grill or in an oven at 450 for 20 minutes.
Thanks for watching and enjoy!
