Pectin is used as a thickening agent in foods such as jams and jellies, marmalades and other preserves.

Dispersing and hydrating pectin can be difficult as the powder has a strong tendency to form lumps when added to water. Premixing the powder can help but this adds to process time and costs.

In this video Silverson demonstrates how using a high shear mixer is a simple and effective way of preparing an agglomerate-free pectin solution in a matter of minutes.

The Silverson Ultramix is ideal for dispersing pectin - the unique single-piece mixing head rapidly incorporates and hydrates the powder in a fraction of the time taken by conventional agitators. There is no need to premix the powders and the pectin does not have to be sifted onto the surface to prevent agglomerates.
