This beef stir fry with ginger and spring onion is simple, quick, and incredibly satisfying. The beef turns out tender and juicy, with the aroma of fresh ginger and scallion coming through beautifully.
In this video, I will show you how to slice and marinate the beef properly, and how to cook it over high heat so it stays soft and flavorful. Once you understand the technique, this becomes one of those dishes you can cook anytime with confidence.

Recipe:
Ingredients (2 to 3 servings)
Beef and Marinade:
250 g beef, sliced into thin strips across the grain
1 tbsp light soy sauce
1 tbsp Shaoxing wine
1/8 tsp ground white pepper
1/4 tsp sugar
1 tbsp cornstarch
1/8 tsp salt
1 tbsp cooking oil
Aromatics
1.5 inch fresh ginger, thinly sliced
2 to 3 stalks spring onion, cut into 2-inch sections, white and green parts separated
Seasoning Sauce
1 tbsp oyster sauce
1 tbsp light soy sauce
1/2 tsp sugar, optional
1/4 tsp dark soy sauce
2 tbsp water
Cooking Oil
2 to 3 tbsp oil for stir-frying
Instructions:
1. Slice the beef thinly across the grain.
2. Marinate with soy sauce, Shaoxing wine, white pepper, sugar, cornstarch, salt, and oil. Let it rest for 15 minutes.
3. Slice the ginger and cut the spring onion into sections. Separate white and green parts.
4. Heat oil in a wok or pan. Stir fry ginger and the white parts of the spring onion until aromatic. Remove and set aside.
5. Add more oil if needed. Sear the beef over high heat in a single layer until browned on both sides. Do not overcrowd the pan.
6. Return the ginger and spring onion to the wok. Add the green parts of the spring onions.
7. Add oyster sauce, soy sauce, sugar, dark soy sauce, and water. Stir quickly to coat the beef.
8. Once the sauce thickens and coats the beef, remove it immediately and serve it hot with rice.
