These are delicious!
Strawberry Cheesecake Sweet Rolls
1/2 cup warm water
1 tsp. sugar
1 tbsp. plus 1 tsp. yeast
2 cups all purpose flour
2 cups bread flour
1/2 cup butter, softened
1 cup warm milk
1 egg
2 tsp. salt
1/2 box vanilla instant pudding
Mix together 1/4 cup of warm water, 1 tsp. sugar and the yeast and set aside for a few minutes to proof. Put all the other ingredients in a bread machine and set on the dough cycle. When the cycle is complete, turn dough out onto a floured surface and punch down. Let rest for a few minutes then roll out into an 18" x 24" rectangle. Spread with the cream cheese filling then spread strawberry jam or strawberry preserves over that. Roll up jelly roll fashion then cut into 1" to 1 1/2" sections. Place on a buttered baking pan and cover lightly with plastic wrap. Put in a warm place and let rise for about 30 minutes. Bake at 400 degrees for 12-15 minutes. Let the sweet rolls cool for a few minutes then frost. These are best when completely cool. Even better the next day!
Cream Cheese Filling
2 (8 oz.) pkgs. of cream cheese, room temperature
1 cup sugar
1 egg yolk
1 tsp. vanilla
Mix together the cream cheese and sugar until creamy then add the egg yolk and vanilla.
Frosting
3 tbsp. butter, softened
2 cups confectioners sugar
1/2 tsp. vanilla
4 - 5 tbsp. milk
Mix all the ingredients together, adding milk a tbsp. at a time until you end up with frosting.
