Yes! You can make smoked Salmon with NO brine!
Not only that, but you don't have to build a pellicle to get great smoky flavor.
Both of those methods make for some delicious smoked salmon, but you can definitely produce delicious smoked salmon without it. Here’s what I do. I buy my Salmon, give it a good rinse, dry it, season it and on the smoker it goes, done in an hour.
But get the the temperature wrong by just a few degrees and you'll end up with dry, overcooked salmon. In this video I go into detail about the two numbers you need to nail to produce moist, flaky delicious smoked salmon. You'll actually see me having some challenges with one of those numbers and I'll show you what I did to fix it.
