INGREDIENTS:
Orange Sherbet
Lemon Sherbet or Gelato
¼ cup Chocolate chips, plus more for eyes
White round sprinkle or pearl sprinkle
Flower cookie cutter
Bear or mouse head cookie cutter
Popsicle sticks
Ziploc bag or piping bag
INSTRUCTIONS:
Line a cookie sheet or pan with parchment. Cut foil squares about 5x5 inches. Place the flower cookie cutter one square of the foil, and fill with orange sherbet. Pack it in tight and smooth with an offset spatula or a butter knife. (this is the mane of the lion.) Remove the cutter and put into the freezer on top of the parchment lined cookie sheet while you repeat the process.
Spoon the lemon ice cream into a piping bag (or a ziploc bag). Set in a cup to soften while you remove the middle of the orange sherbet flowers.
Remove one of the orange sherbet manes from the freezer. Put the floral cookie cutter back around the mane in order to keep it from melting faster while working with it.
Stick mouse/bear cookie cutter in the middle. Remove the sherbet in the middle of the cookie cutter with a spoon, then remove the cutter. This should make a mouse shaped hole in the middle of your mane.
Pipe lemon or mango ice cream in its place. Remove the floral cookie cutter from around the mane and return back to the freezer to keep from melting excessively. (Pro tip: put an extra cookie sheet in the freezer to put on top of the foil to keep the cold locked in when in the freezer and also transferring.)
After they have set, remove a lion licker one by one to insert the popsicle stick in the bottom by inserting a knife into the bottom and sticking the popsicle stick into the bottom. Place a foil square on top and return back to the freezer to set. If this part gets melty, remember the lion lickers are not perfect so strive for imperfection. Repeat process until all are completed. Let set in the freezer for at least 1-2 hours to reset.
Melt chocolate chips in a microwave safe bowl for intervals of 20 seconds until completely melted. Pour into a ziploc or piping bag.
Remove a lion licker from the freezer. Carve a small hole in each chocolate chip and insert a white pearl. These are the eyes.
Snip off the corner of the ziploc to create his nose and mouth. The chocolate will set very quickly. (Another option: you could also make the nose and mouth out of the melted chocolate onto wax paper as chocolate transfers and put them on after they have set)
