Onsen Tamago (温泉卵) literally means "hot spring egg," and it's a traditional Japanese side dish often served for breakfast. Known in the West as a slow-cooked egg or sous vide egg, onsen eggs were originally cooked in hot springs, giving them a smooth custardy texture that's somewhere between a soft-boiled egg and a poached egg. In this tutorial, I'm going to show you how to make the best onsen egg using either a rice cooker or just a pot.
