Pumpkin Cup Recipe
Makes about 3 dozen regular size peanut butter cups
Ingredients
¾ cups graham cracker crumbs
1/3 cup pumpkin puree
2 oz. softened cream cheese
2 T powdered sugar
¼ tsp cinnamon
1 tray Candiquik (or about 2-3 cups chocolate chips)
Sprinkles and black frosting for decoration
Directions
1. Blend all ingredients in a food processor until smooth. Transfer to piping bag or Ziploc bag.
2. Place 1 tsp melted chocolate into silicone cupcake liners, then shake to distribute. Repeat for all cups, then refrigerate for 5-10 minutes until set.
3. Pipe 1 ½ tsp filling into each cup. Cover with more melted chocolate, then refrigerate until set (about 15 minutes).
4. Decorate with frosting and sprinkles as desired.
