Want to learn how to make fresh pasta? This particular shape, pasta alla chitarra is close to pasta perfection. It's thickness provides some chew, the addition of semolina flour helps the pasta grab sauce and it's really fun to prepare. You'll need a pasta cutter called a chitarra (Italian for guitar) to make the "official" shape, but I bet you could get away with using a knife if you don't feel like making the investment.
In next week's video I'll show you how to prepare pasta chitarra will fresh peas, pancetta a bit of tomato and ricotta salata.
