Making a great tiramisù is all about getting the details right. Not just the espresso-soaked ladyfingers and the mascarpone cream but also how you serve it and how it’s constructed. We came up with three methods for making tiramisù ranging in difficulty from easy to hard, and this is our Goldilocks method: It looks and eats fancy, but it’s actually straightforward to make.
In this video, chef Nicholas Gavin demonstrates how we make a towering icebox cake by stabilizing the mascarpone cream with gelatin and xanthan gum. The stabilized cream sets up firm enough to slice cleanly; it won’t “weep”; and it still eats like a cloud. Layered into a loaf pan along with perfectly soaked ladyfingers, and you've got a stunning centerpiece dessert ... or a hot date with a big spoon and your couch.
