![How to Make Tiramisù a Tasting Menu Stunner
Tiramisù, the classic layered Italian dessert consisting of layers of espresso-soaked cookies swaddled in mascarpone cream, is overdue for a glow up.
When we were developing a multicourse tasting menu, we wanted to end the night on a sweet, caffeinated note, so tiramisù was a no-brainer. But we also wanted something that would be visually striking, unfamiliar at first glance, yet wholly recognizable as soon as our guests sunk a spoon through the layers. So, what could we do? Easy: get out the paint gun.
In this video, chef Nicholas Gavin walks you through our process for making individual servings of tiramisù, set in beautifully plump molds that look like little pillows. By fortifying the mascarpone cream with stabilizers—gelatin for the zabaglione base, xanthan gum in the whipped cream—we were able to freeze the molded treats and spray warm melted chocolate all over their exteriors; the stabilizers guarantee the whipped mascarpone is as creamy and light once thawed as it is when it’s freshly made. When the warm chocolate hits the frozen cream, it immediately solidifies into wee fluffy pebbles, making it look just like the even dusting of cocoa powder used as a garnish for classic tiramisù preparations.

![Transform a Supermarket Chicken Into a Restaurant-Worthy French Classic
Poulet farci is French for “stuffed chicken,” a classic dish. For our version, we use a chicken crown—the breast kept on the bone with the legs cut away—and we turn the leg meat into a mushroom-and-herb-flecked farce, which we stuff between the breast meat and the skin.
It’s both a super-refined way to serve a whole roast chicken and super smart. The problem with roasting a whole chicken is getting the leg meat cooked through without overcooking the breast, while simultaneously producing crisped, bronzed skin. Enveloping the breast in an insulating layer of farce keeps it from overcooking, and separating the skin from the breast with that layer of insulating farce helps it to brown and crisp. And ... it looks and tastes amazing!
In this video, chef Nick Gavin shows you how to transform a humble supermarket chicken and transform it into a dish you’d be happy to be served at a Michelin-starred restaurant. Nick gives a master class on how to butcher the chicken while preserving the integrity of the skin, and demonstrates some sound ground meat technique for creating a smooth, truffle-and-duxelles-speckled farce, along with tips for how to stitch the chicken skin, pipe in the farce, and inject the breasts with brine for a ridiculously, ridiculously good-looking and delicious roast chicken.

![Butter-Basted New York Steak: The Quick and Easy Steak That Everyone Loves
The New York strip steak is a Goldilocks steak: It’s beefy but not too beefy, tender but not too tender. And it’s pretty easy to cook, too.
In this video, ChefSteps cofounder Grant Crilly shows you how to do a little pre-cook butchery to remove the tough sinew that lies under the fat cap, and then demonstrates how to sear, butter-baste, and then rest it, guaranteeing a perfectly cooked steak, every bite as tender as it can be. (Don’t worry about that fat cap; he chops it up, tosses the pieces in the pan, and they become golden and melty and delicious, perfect for topping each bite of steak!)
