Much garden food in winter is root and stored vegetables, such as onions, squash, beetroot, garlic and potatoes. Fresh greens are more scarce, except under a cover such as this.
Key sowing dates are late August and through the first three weeks of September. This allows plants enough time to develop a strong root system before midwinter. They need that because during the darkest and coolest months, growth is slow. And these plants also crop heavily through early spring, as you see in this video.
Watering is very little in midwinter, maybe once only in January. Then once a week in February, twice a week in March and into April. I am using magnetically treated water, as explained in this video: youtube.com/shorts/b14ukFBUv0s
