✿ Veganlovlie Recipes / What We Eat in a Day - Vegan : Here we go for another What We Ate video where we show you what we eat in a day as a vegan couple at the Veganlovlie Cocoon. :)
We started the day with some rice pudding or rice porridge and our usual cup of tea.
A little bit later during the day, I made some eggplant fritters with a Chinese eggplant that I had. The batter consisted of chickpea flour or besan, a pinch of baking powder, a tablespoon of nutritional yeast, salt to taste and enough water for a pouring consistency.

These eggplant fritters are a popular Mauritian snack that are sold at street corners. They would usually be deep fried but I pan fried them with less oil.
For dinner, I made a béchamel sauce to which I added some spinach, broccoli, mushrooms, peas and sweetcorn. We had this over some brown rice spaghettini.
