Take away special chop Suey 招牌杂水
Chop suey literally translate as “mix water” in Chinese, it’s a popular dish at Vongs Kitchen (my shop). It is cooked with selection of vegetables with bean sprouts making the main part of the ingredients; along with selected meats or seafood. At the shop I used chicken, char siu pork and king prawns for all my special dishes. Chop suey is a healthy dish with lots of vegetables in the ingredients. Below is my recipe for the cooking special chop suey at home.
Ingredients;
4 prawns (26/30 size)
Half chicken breast sliced
5 slices of char siu pork
200g bean sprouts
Half small onion sliced
1 spring onion/ small handful of leek
30g carrot
2 mushrooms cut into half
30g water chestnuts
30g garden peas
Some potato starch to thicken
Condiments;
1 tablespoon dark soy sauce
80ml water
2g salt
2g MSG
Dash cooking wine
A squeeze of white pepper powder
Half teaspoon oyster sauce
Couple dashes of sesame oil
Tips;
*Boil the chicken and prawns for 2 minutes before adding the pork and vegetables
*Give the ingredients a good stir fry before adding water
*Spread the bean sprout out when adding so it heat up quicker, and don’t stir fry straight away after you turned it out.
*Turn the heat down when first adding the potato starch, thoroughly stir the ingredients before finishing off in high heat.
