Deep fried chicken in sweet chilli sauce is a popular seller in the shop; this dish has a sweet, spicy and sour taste with crunchy texture. I used chicken breast cut into long strips and deep fry between 10-15 minutes to get it really crispy. Sweet and sour sauce are used for the sweet and sourness, fresh chilli and chilli powder for spiciness and extra sugar to sweeten it up. For colour and appearance the vegetables used are onion, carrot, chilli and leeks.
Below is my recipe for how to make the deep fry chicken with sweet chilli sauce.
Ingredients;
1/3 chicken breast cut into strips
40g carrots
30g onion
30g leek/1 stalk of spring onion
Half fresh red chilli
130ml sweet and sour sauce (see my channel)
Plenty of potato starch to coat the chicken
Marinate chicken strips;
Pinch of salt
Pinch of MSG
Dash of white pepper powder
Dash of cooking wine
Dash of sesame oil
Egg to coat
Condiments;
2 tablespoon sugar
Half teaspoon chilli powder
Method
Cut the chicken breast into long strips and marinate it for 20 minutes with a pinch of salt, MSG, a dash of white pepper powder, cooking wine and sesame oil.
Pour some egg into the chicken and mix thoroughly and coat it with plenty of potato starch. Ensure each strip is fully coated in potato starch for deep fry.
Fill a wok with plenty of vegetable cooking oil and heat it to high (around 180°C) and deep fry the chicken for 10-12 minutes. Set aside on a metal strainer.
Heat wok with some vegetable cooking oil and add all the vegetable ingredients.
Stir fry for a couple of minutes and add the sweet and sour sauce, sugar and chilli powder.
Bring it to boil then thicken it with some potato starch and add the deep fry chicken to complete.

Tips;
* Do not over fill your pot with oil to avoid over spill
* Ensure oil is hot before deep fry, around 180C
* Submerge the chicken in oil when deep fry so that all parts of the strips are crispy
* Do not cut the chicken strip too thick, about the size of a straw would be good if you can
