This week we are showing you How to Cook Neck Bones. This is Comfort Food Recipes at its finest. In today's economy, Budget Recipes can really help a family stretch a dollar and still enjoy delicious meals. We took some inexpensive Pork Neck Bones and smoked them before braising them to a delicious finish in the oven. We served them with Jasmine Rice and some awesome Fried Cabbage (link below).

Ingredients
4lbs Neck bones (pork/beef)
4 cups chicken stock/broth
6 slices bacon
2 tbs bacon grease/oil
1 med bell pepper
1 med yellow onion
5 cloves garlic
2 stalks celery
4 tbs all purpose flour
1 tbs all purpose low salt seasoning (Badia Complete)
Salt and Pepper to taste
1 tsp red pepper flakes (optional)
Clean and dry neck bones well, season with salt and pepper and dust with all purpose flour if browning on stove top (smoking is optional but delicious)
Cook bacon to get grease
Brown pork in 2 tbs bacon grease or oil
Remove browned pork and toss onions, celery and bell peppers into pot and cook for 10 mins on med
Add 3 tbs flour and allow flour to brown with veggies for 5 mins
Add garlic and cook for about a minute
Add 4 cups of stock/broth and bring to a boil (cover to top of pork)
Add browned pork, bacon bits, 1 tbs Badia, red pepper flakes and salt and pepper to taste
Cover and place in pre-heated 325 F oven and cook until tender (falling off the bone) 1.5 - 2 hours based on sizes.
Garnish with parsley, serve with rice/mashed potatoes/grits and enjoy
