To cook Bitter Melon or Bitter Gourd, also known as Bitter Cucumber, you first need a high level of Bitterness tolerance! Here are some hacks to make it eatable for western palates...
Soak it in salt for a while before cooking in order to diminish its bitterness. To reduce its strong taste, we paired it with a flavorful and slightly sweet stuffing made out of pork, mushrooms, noodles, fish sauce and coriander.
Trick: once stuffed, you can close your Bitter Melon with the green of an spring onion, just blanched in water.
We realized a broth out of soy sauce and vegetables, and cooked our bitter melon into it for 20 minutes or until they come back to the surface.
Try it out! Once you get accustomed to its taste. it's actually quite nice!
