Wondering how your favourite drink is made? I visited Kyoto Prefecture and had the privilege of watching how the leaves are picked as well as getting a behind the scenes look at an aracha refining factory to see how tencha (what is used to grind into matcha) is prepared. Not all matcha is created equal, the process in this video is for a higher quality matcha. There are nuances that can drastically change the quality, taste and texture of matcha- for example less time shade growing or machine grinding instead of stone grinding.
