Why is chicken tikka masala considered a British national dish, even though it is a curry with Indian roots? We went to the place where it is said to have been invented: the Scottish city of Glasgow. In the 1970s, a chef who had immigrated from Pakistan is said to have spontaneously conjured up the best of both worlds on a dissatisfied guest's plate: Well-seasoned, grilled chicken with lots of sauce.
