Don’t call Ukrainian Borsch a soup. Here’s why.  @DWFood

Borsch is far more than Ukraine’s most famous dish — it is a living archive of the country’s history, identity and cultural resilience. Through his fight for UNESCO recognition, Ukrainian chef Yevhen Klopotenko helped prove that Borsch is not a shared generic recipe, but an endangered cultural phenomenon deeply rooted in Ukraine’s intangible heritage. Thanks to Svitlana Koronenko’s archival research and her book “Borsch Bible,” we uncover some of the oldest and most unexpected Borsch variations.
