So this is how to do it without splitscreen cheese. Yep. Speed cars suck on Expert btw.
The tl;dr. With the way Expert is balanced (slipstream only provides bonus acceleration/boost charge and not higher top speed) it's very difficult for the AI to catch up on a few of the tracks in the game -- especially in GP mode if you're driving a good vehicle, you probably already noticed that on a lot of tracks it takes the AI a solid lap to catch back up after the start.
I likewise discovered very early-on that the AI are very, VERY bad on Area 41 -- especially if you can get an early lead on them to get out of slipstream range, as their rubberbanding makes them cause more mistakes than if they were near you (going too fast tho). It's not easy, but with the right car it's very possible to lap one of the AI in a 3-lap race ... and it brings me to this: getting so far ahead that having time to crash and reverse over the finish line for the Show Off... trophy/achievement is easier than getting a start boost.
This is probably doable on 5 or even 6 laps, but I put it to 7 just to be safe as I didn't know how long it would take for 2nd to crash (Keiko crashed on lap 4, I think?
You want a quick, but good-handling, car to pull this off, which will be either a Balanced or an Acceleration vehicle. I used Viktor's Blade for this because as you can see it's pretty dang quick, though Toshiro's Furious, Aston's BullDog and some of the other vehicles are all solid, stable-handling, and tight-drifting to maintain enough speed out of every corner to out-drive the AI and their rubberbanding.
The main trick here is a car that recovers quickly out of drifts, and isn't going to randomly throw its back end out unless you tell it to (Viktor's Rennen, for example, for a car that will lose the back end when you don't want it to) drifting only when you need to, and drifting for as little time as possible. You'll only get one boost per lap, but it's all you'll need.
Drive fast, don't hit any walls, and wait for the AI to screw themselves up. This is a very, very easy trophy to solo (without needing to resort to split-screen shenanigans) with enough patience. You might not always get away from the AI on the first few corners; if someone is still with you after the first lap you will need to restart; the trick here is to get some seconds ahead of them all on the first lap, and use their rubberbanding against them to cause them to crash. Then you'll have mooooooooooooooooore than enough time to reverse around at the end for the trophy. EZ. :D
