Tess's Crab and Shrimp Burgers ~ Crab and Shrimp Cakes
Makes 6 nice size patties and would make 8 smaller.
INGREDIENTS:
1 pound crab claw meat
1 pound 16/20 shrimp - peeled and cleaned
1 sleeve of crushed Ritz crackers (just a little over a cup)
1/2 cup mayonnaise
1 tbsp. yellow mustard
2 eggs
1 tbsp. Worcestershire sauce
salt
white pepper
1 tsp. Old Bay Seasoning
1/4 cup finely chopped green onions (green part)
1/4 cup finely chopped parsley
hot sauce - optional
butter
Preheat oven to 400 degrees
In large bowl mix everything together except meat.
After mixing, fold in crabmeat and shrimp.
Cover and refrigerate for 2 or more hours.
Form patties and fry in butterd oven proof medium heat pan for
2-3 minutes on each side or until golden and firm.
Place in 400 degree oven and finish cooking for 6-10 minutes
depending on size of burgers.
Remove from oven and pan and let rest for 10 minutes before
serving.
Enjoy.

How to Make Maryland Crab Soup ~ Crabmeat Recipe
INGREDIENTS:
1 pound crabmeat
1 can of baby clams and juice
1 cup diced onions
1 cup diced celery
1 cup diced carrots
1 cup corn
1 cup lima beans
1 cup diced potatoes
1 - 14 oz. can diced tomatoes
4 cups chicken broth
1 bay leaf
2 minced cloves garlic
1-3 tsp. old bay seasoning
1 tbsp. Worcestershire sauce
fresh chopped parsley
salt and black pepper
olive oil
In a soup pan on medium heat add olive oil,
onions, celery, carrots, minced garlic and
salt and black pepper.
Stir and cook for 5 minutes.
Add tomatoes, juice of baby clams, Worcestershire
sauce and Old Bay Seasoning (add a little at a time).
Stir and turn up heat to bring up to a simmer.
Add chicken broth, corn, lima beans and bay leaf.
Bring up to a simmer, reduce heat, cover and cook
for 30 minutes.
Add potatoes, baby clams and crabmeat.
Give soup a stir and bring back up to a simmer
and cook for 10-15 minutes until potatoes are tender.
Give a taste test along the way.
Add a handful of fresh chopped parsley at the end,
stir and serve.
Enjoy.

Crab a la King over Red Lobster Biscuits Recipe
INGREDIENTS:
1 box of Red Lobster Cheddar Bay Biscuits
Follow package instructions. Just lightly brush with the seasoned butter.
1/2 pound crab claw or lump meat
1/2 pound bay scallops or shrimp or fish
3 cups milk
1 can cream shrimp
3/4 cup diced onions
3/4 cup frozen peas
1 small jar drained pimentos
4 large cloves minced garlic
1/4 cup fresh chopped parsley
zest of one lemon
1 tbsp. fresh lemon juice
1/4 tsp. red pepper flakes - optional
1/4 tsp. black pepper
salt to taste
2 tbsp. unsalted butter
2 tbsp. flour
oil to saute scallops
In a pan on medium high heat, add oil and saute scallops
for 1-2 minutes, remove from pan and set to side.
In a pan on medium heat, add butter and diced onions.
Stir and cook for one minute.
Add pimentos, black pepper, garlic and red pepper flakes.
Stir and cook for one minute.
Add flour and stir and cook for 1-2 minutes.
Slowly add half of milk, turn up heat to bring to simmer,
stir until no lumps and add remaining milk.
Add cream of shrimp and stir and cook or 5 minutes.
Add lemon zest, lemon juice and peas and stir.
Add fresh parsley, crab meat and bay scallops.
Stir and cook for 1-2 minutes.
Serve over biscuits, bread, toast, pasta or rice.
Enjoy.
