This is the first thing I made for my wife after she gave birth to our second child a few days ago.
This Chicken Bone Broth Stew is a postpartum powerhouse full of nutrient dense collagen, electrolytes and protein. The broth is literally liquid gold. Plus itโs the most cost effective way to eat chicken.
Hereโs the move. Buy a whole chicken and roast it on night one (my whole roast chicken recipe is coming soon ๐คค) the next day pick the leftover chicken off the bone, brown an onion in olive oil then throw all the bones in a Dutch oven.
Add whatever old veggies you have in there too (like the tops of carrots, celery leaves, thyme, rosemary, garlic, etc) and a stock cube, salt & pepper, paprika, cumin And let that boil away for 3 1/2 hours on a soft boil.
The slow cooking method pulls all the beneficial nutrients and flavors out of the bones and connective tissues in the chicken and imparts all that flavory goodness into the stock. Then strain it into another bowl, pick off any other chunks of usable chicken meat that came off during the cooking process.
Now that the stock is made we build the stew. Using the same Dutch oven, cook a few slices of bacon (optional but recommended) then brown an onion in some butter, then add chopped carrot and celery and cook for a few minutes before adding the chicken and browning. Then add you stock back in, bring back to a soft boil and add some pasta and some lentils. Once those are cooked youโre ready to go!
