2 lb. chuck steak
2 tsp. salt
1 tsp. pepper
3/4 c. flour
1/4 c. oil
1 large onion, chopped
2 cloves garlic, minced
2 stalks celery, chopped
1 tsp. tomato paste
1 (14.5) oz. can diced tomatoes
1 tsp. smoked paprika
1 tsp. oregano
1 Tbsp. Worcestershire sauce
1 1/2 c. beef broth
Preheat oven to 325 degrees. Cut meat into small pieces. Season both sides with salt and pepper. Dredge meat in flour. Add oil into large skillet and heat on medium high.
Once oil is hot enough to fry, then add meat. Brown both sides of meat approximately two minutes on each side. When done frying all the meat, remove and set aside. Add onion, garlic and celery to the pan. Saute for 1-2 minutes then add tomato paste to vegetables. Next, add diced tomatoes, paprika, oregano, Worchestershire and beef broth to mixture. Place meat in large baking pan with foil and seal tightly. Place pan in oven on middle rack. Cook for 2 to 2-1/2 hours or until meat is tender.
