Stop Doing the 3-2-1 Method!
ingredients
* 1 rack of pork ribs
* Your favorite BBQ rub
* Your favorite BBQ sauce
* Apple juice or apple cider vinegar for spritzing
### Instructions
1. Clean and trim your ribs. Remove the membrane and any loose pieces.
2. Season the ribs generously with your favorite BBQ rub.
3. Preheat your smoker to **250°F**.
4. Place the ribs on the **middle rack** and smoke for **2 hours**. **Don't open the lid!**
5. At the 2-hour mark, give the ribs a **light spritz**.
6. Continue cooking for **1 more hour**.
7. Brush on your favorite BBQ sauce during the final portion of the cook.
8. When the ribs reach an internal temperature of **200°F or higher** (typically around **3 hours and 15 minutes**), remove them from the smoker.
9. Let the ribs rest for **10–15 minutes**, slice, and enjoy!
**Pro Tip:** Don't cook by time alone. Start checking for tenderness around the 3-hour mark. The meat should have good pullback from the bones and a slight bend when lifted. Internal temperature is a guide, but tenderness is the real indicator.
