🇭🇹 HAITI | GRIOT (GRIYO) & PIKLIZ
52 years.
That’s how long Haiti have been waiting to return to the World Cup.
But while the team has been waiting, the music never stopped, the dancing never stopped and the belief never stopped.
For this episode of Taste The Football, I made Griot (Griyo) and Pikliz 🇭🇹🔥
Griot is Haiti’s famous marinated fried pork – slow cooked until tender, then fried until crispy.
Pikliz is a fiery pickled slaw made with cabbage, carrot, vinegar and Scotch bonnet chillies.
One brings the strength.
One brings the spark.
Just like Haitian football.
From Emmanuel Sanon’s historic World Cup goal against Italy in 1974, to the fans bringing vibes, love and unity wherever they go, Haiti’s football story is built on pride, passion and perseverance.
Once they were kids with a dream in their hearts.
Now they’re trying to write the next chapter.
Haiti… you’ve got the three points. 🇭🇹⚽️
👇 RECIPE
GRIOT (GRIYO)
• 1kg pork shoulder
• 2 limes
• 1 orange
• 6 cloves garlic
• 1 onion
• 2 spring onions
• Fresh parsley
• 1 tsp thyme
• 1 Scotch bonnet
• Salt & black pepper
• Vegetable oil
PIKLIZ
• ½ white cabbage
• 2 carrots
• 1 onion
• 2 Scotch bonnets
• 250ml white vinegar
• 1 tsp salt
• 1 tsp sugar
METHOD
1. Marinate the pork with citrus, garlic, herbs and seasoning for at least 4 hours (overnight is best).
2. Mix all Pikliz ingredients and leave to pickle.
3. Simmer the pork gently for 1½–2 hours until tender.
4. Fry until golden and crispy.
5. Serve with Pikliz.
