These Grilled Gator Eggs are easily made using chicken, shrimp, crab, gator- meat or just about anything you can think of. Gator meat should be pounded flat with a meat tenderizer and then minced finely. I also like to soak it in buttermilk for a day or two. These gator eggs are awesome using canned chicken as well. I actually make gator eggs using chicken the most because it's a lot cheaper. Don't forget that you can make these ahead of time by freezing them. Make sure to always bring the gator eggs to temp slowly so that the vegetables can cook and become tender. Be careful not to move them around too much on the grill as they are very delicate. Let them cool a bit too firm up before eating.

16 ounces of crab meat or other meats
1/4 cup green bell pepper
1/4 cup red bell pepper
1/4 cup of chopped onion
2 cloves of minced garlic
3 to 4 large Jalapeños
3 TBS mayonnaise
1.5 tsp of dijon mustard
1/5 tsp lemon juice
1 TBS fresh parsley
1.5 cups of bread crumbs
1 egg
salt and pepper
1 tsp plus more to sprinkle over gator eggs
