Join Weber Ambassador Jordan Isom of FireFoodFamily as he cooks up some drool-wrthy Grilled Cheese Smashed Burgers with a bacon jam on our new Searwood XL 600 Pellet Grill with the Full Griddle Insert.

Ingredients:
2- 1/4lb patties
6 slices American cheese
Bacon Jam
2 Buns
Burger Sauce
Bacon Jam Ingredients:
1lb bacon (cut into 1 inch pieces)
1 sweet onion (sliced)
1 or 2 jalapeños (sliced)
2 Tbs Apple Cider Vinegar
1/8 cup brown sugar
1/8 cup maple syrup (add extra for more jam consistency)
Burger Sauce Ingredients:
1 Cup Mayo
2 Tbs Mustard
1/2 Tbs Paprika
3 Tbs bread and butter pickles (minced)
3 Tbs bread and butter pickle juice
Salt and Pepper
1/2 tsp brown sugar
1tsp onion powder
1 tsp garlic powder
Splash lemon juice
Directions:
First go ahead and make the burger sauce. It will taste way better after the flavors have time to combine in the fridge.
Next get the Weber Searwood Pellet Grill fired up to 450F with the griddle on.
Next go ahead and prep the bacon jam ingredients while you wait on the pellet grill to preheat.
Throw the bacon onto the griddle and cook down 1/2 the way. Set aside.
Start cooking the veggies in the leftover bacon grease. Once almost fully cooked, combine the bacon with the veggies and mix in the apple cider vinegar, brown sugar, and maple syrup. Mix and cook until the consistency becomes jammy. Do no over cook because sugar will burn. The bacon jam will thicken more after you take it off the griddle.
Place a ball of 80/20 ground chuck on the griddle and smash. Season with something basic and flip after cooked 85% of the way. Top with cheese and let melt.
While you wait, start on the buns. Add a little butter to the griddle followed by a bun face down, 2 slice of cheese, and the other bun face up on top. Repeat.
Lastly its time to assemble. Start with the bottom bun, sauce, patties, bacon jam, more sauce, and the top bun! Enjoy!
