Little trick I learned thanks to Campbell Barton.
Note by Campbell: [Alt + P and Alt + J] (as pointed out by Jerry Perkins) - is fine for an even grid, for some distorted grid it won't work reliably because of how pairs of triangles are selected for joining. It is better for the example in the video though.
