Ingredients:
Ponzu sauce:
• 15ml fresh lemon juice
• 3 tbspn rice wine vinegar
• 2 tbspn soy sauce
• 1 tbspn finely sliced shallot
Everything else:
• 150g of high quality marbled steak (Scotch fillet/sirloin or similar. If you’re ever looking for an excuse to buy wagyu, this is it).
• Spring onion
Directions:
• Combine the sauce ingredients and let them sit for a few minutes while you prepare the steak.
• Allow the steak to hit room temperature, then lightly salt and put it on direct flame over an extremely hot fire until all sides are browned – this should only take 1.5-2min total.
• Slice the steak as thinly as you can and place around a plate, then cover with the sauce and garnish with sliced spring onion. Some sesame seeds for garnish are a nice addition if you have them.
