Ingredients:
for the red pickled ginger :
200g young ginger
2 tsp salt
200ml red plum vinegar
for the mayonnaise :
50ml soy milk
100ml avocado oil
1 tbsp apple cider vinegar
1 tsp maple syrup
1 tsp mustard
1/2 tsp salt
for the batter :
100g whole pastry flour
20g rice flour
1/2 tsp baking powder
3g dried shiitake
2g kombu
300ml water
50g king trumpet mushroom
1 tbsp oil
2 tsp soy sauce
30g green onion
worcester sauce
sea lettuce
Instructions:
1. thinly slice young ginger, sprinkle salt and massage well. Put a weight and leave for an hour.
2. squeeze the ginger and soak in red plum vinegar.
3. put all the ingredients for mayonnaise into a blender cup and blend until it thickens.
4. combine all the ingredients for batter and whisk well.
5. fry king trumpet mushroom and season with soy sauce.
6. preheat takoyaki pan to 200C/390F, put oil in the pan and pour the batter.
7. put king trumpet mushroom, red pickled ginger and green onion over the batter.
8. make the batter into a shape of ball.
9. top with worcester sauce, mayonnaise and sea lettuce.
10. Enjoy!

新生姜 200g
塩 小さじ２
赤梅酢 200ml
＊マヨネーズ＊
豆乳 50ml
アボカドオイル 100ml
リンゴ酢 大さじ1
マスタード 小さじ1
メープルシロップ 小さじ1
塩 小さじ1/2
＊たこ焼き生地＊
全粒薄力粉 100g
米粉 20g
ベーキングパウダー 小さじ1/2
乾燥椎茸 3g
昆布 2g
水 300ml
エリンギ 50g
油 大さじ1
醤油 小さじ2
ネギ 30g
ウスターソース
あおさのり
「作り方」
１、新生姜を薄切りにして塩でもみ、重石を乗せて１時間ほど置きます。
２、新生姜を絞り、赤梅酢に漬けておきます。
３、マヨネーズの材料を全てブレンダーで混ぜ、マヨネーズを作ります。
４、エリンギを炒め、醤油で味付けしておきます。
５、たこ焼き生地の材料を全て混ぜ合わせておきます。
６、たこ焼きプレートをよく熱しておき、油をひいて生地を流し込みます。
７、エリンギ、ネギ、紅生姜を加えます。
８、たこ焼きの形に整えます。
９、ウスターソース、マヨネーズ、あおさのりをかけます。

Ingredients:
300ml water
250ml almond milk (or your choice of vegan milk)
10g(4 tbsp) Hojicha leaves
2 - 4 tbsp sweetener (I used maple syrup)
Instructions:
1. bring water to a boil. add Hojicha and steep for 2 minutes.
2. pour almond milk in to the pan, heat until its almost boiling then steep for another 2 minutes.
3. remove the tea leaves and add sweetener.
4. Enjoy!

Ingredients:
40ml espresso (2 shots)
420ml water
3/4 tsp agar powder
2 tbsp coconut sugar
80g cacao paste
500ml almond milk
40ml maple syrup
400ml coconut milk
NO2 whip cream charger
Instructions:
1. put espresso, water, agar powder and coconut sugar together in a sauce pan and gently bring to a boil.
2. pour the mixture into a tin and leave it in a fridge.
3. put cacao paste, almond milk and maple syrup in a sauce pan and warm it up on a low heat until cacao paste melts.
4. prepare coconut whip cream with cream charger.
5. put coffee jelly, cacao drink and coconut whip cream in a glass.
6. Enjoy!

カカオマス 80g
濃いアーモンドミルクほんのり黒糖味 500ml
メープルシロップ 40ml
ココナッツミルク 400ml
窒素クリームチャージャー 1本
「作り方」
１、エスプレッソ、水、粉寒天、パームシュガーを鍋に入れ、沸騰直前まで温めます。
２、型に流し入れ、冷蔵庫で冷やします。
３、カカオマス、アーモンドミルク、メープルシロップを鍋に入れ、カカオマスが溶けるまで弱火で温めます。
４、ココナッツクリームを窒素クリームチャージャーで作ります。
５、ガラスのカップに盛りつけます。

Ingredients:
200g red lentils
800ml water
2 tbsp oil
2 tsp cumin seed
a clove of garlic
10g ginger
1 green chili
1/2 tsp turmeric
2 tsp salt
coriander
Instructions:
1. soak red lentils in water for a few hours then rinse and drain.
2. cook red lentils on low heat. simmer about 20 minutes.
3. fry cumin seed, garlic and ginger on a frying pan. then add onion and green chili.
4. Add salt and turmeric into red lentils and combine all the ingredients.
5. Enjoy!

赤レンズ豆(皮なし) 200g
水 800ml

クミンシード 小さじ2
にんにく 1かけ
生姜 10g
グリーンチリ 1本
ターメリック 小さじ1/2
塩 小さじ2
コリアンダー 少量
「作り方」
１、赤レンズ豆を２〜３時間ほど浸水し、水気を切ります。
２、分量の水を加えて弱火で20分ほど、コトコト煮ます。
３、クミンシード、にんにく、生姜をオイルで炒めます。香りが出てきたら玉ねぎとグリーンチリも加えます。
４、全ての材料を混ぜ合わせます。
５、エンジョーーーイ！

600g organic lemon
600ml water
400g beet sugar (or whatever you choose)
Instructions:
1. put lemon, sugar and water in a pot. simmer for 15 minutes.
2. let it chill in a fridge.
3. dilute with water. add mint and sliced fresh lemon.
4. Enjoy!
*If you dont like the bitter taste, remove the white part under the peel.
* I recommend to dilute the lemon syrup with carbonated water or soy milk when you want something different than usual.

水 600ml
てんさい糖 400g（甘味料はなんでも良いです。）
「作り方」
１、レモン、てんさい糖、水を鍋で弱火で15分程煮ます。
２、冷蔵庫で冷やします。
３、水で割ってお好みでミントや輪切りのレモンで飾ります。

※普通のレモネードに飽きたら炭酸水や豆乳で割っても美味しいですよ。

1 tsp cumin powder
1 tsp coriander powder
1/2 tsp turmeric powder
1/4 tsp five spice powder
1/4 tsp chili powder
4 tbsp rice flour
20g white sesame paste
20g dried tomato in oil
1 tbsp brown sugar
2 tsp salt
500ml water
100g lotus root
100g spinach
100g mushroom
30g coconut oil
Instructions:
1. fry onion on medium to high heat until brown. it takes 10 - 15 minutes. then add powder spice.
2. in a blender, put sesame paste, dried tomato, brown sugar, salt and water together and blend well.
3. fry lotus root, mushroom and spinach in a pan.
4. add the onion paste and the mixture then simmer until it gets thicker.
5. Enjoy!

「作り方」
１、たまねぎを茶色くなるまで中火か強火で炒める。10~15分くらいかかります。必要に応じて水を加えながら、スパイスを加えます。
２、ブレンダーで白練ごま、ドライトマト、黒糖、塩、米粉、水を加えてよく攪拌します。
３、れんこん、キノコ、ほうれん草を炒めます。
４、１と２を加えて、とろみが出るまで少し火にかけます。
５、エンジョーイ！
