I've been working on a new Immersive First-Person Camera which will be added to my Arcade Drift Cam, as suggested by Jack Foxtrot. It allows for custom positioning, as well as adjustable G-force movement and tilt. Additionally, it has a horizon lock setting which works exactly how it does in sims like Assetto Corsa and Project Cars.
The mirrors are part of the car's scripting.
